The service is attentive but discrete. We know all our members by name. In a society that is increasingly dominated by cafes, the Exchange is a gentle reminder that dining is an appreciation of the culinary arts.
Our menus are changed on a daily basis representing the best produce available in market. We are heavily influenced by the seasonality of produce to ensure the finest dining experiences supported by a specifically selected wine list.

Annie McCloskey
Position: Restaurant Manager
Role: Responsible operation of restaurant, training of staff, wine and beverage list
Background:
Trained with Mode Catering learning kitchen skills
Trained within Rockpool organization, in the different restaurant learning different skills, last year and half at Rockpool - trained from commi to head waiter
Lived in London for 6 years working in and managing high profile restaurants such as e&o and cicada
Kris Wilkinson
Position: Co-Head Chef
Role
To run, promote, control and inspire the kitchen. Creating innovative and cost effective menus.
Background
Started training at 17 at Fins in Byron Bay. Lived and worked in Sydney, South East Asia, London and Bhutan including restaurants such as Celsius, Jimmy Licks and China Doll.
Marko Adler
Position: Co-Head Chef
Role
To run the kitchen at the Royal Exchange, providing inspiration and creating interesting menus for all members and guests.
Background
Started apprenticeship in North Sydney at Armstrong s Brasserie. Lived and worked in Sydney, Great Barrier Reef, London, Caicos Islands, Singapore and Bhutan! Working in a variety of restaurants including Rockpool, Grand National, Bayswater Brasserie, e&o and Longrain
